Blue Lucy Venison Burgers

About the Recipe

You have probably heard of the Juicy Lucy Hamburger...well this the my take using fresh ground venison and blue cheese!

Ingredients

  • 1 ½ lbs ground venison

  • ½ lb thick cut bacon

  • 1 tsp peppercorns

  • 1 tsp juniper berries (about 10 berries)

  • 1 tsp Dash Onion & Herb

  • Blue cheese

  • 1 yellow onion, sliced thin

  • Mushrooms, sliced

  • 2 tbsp butter

  • Sliced Tomato

  • Buns

 

Kitchen Tools

  • Chard #12 Heavy Duty Electric Grinder

  • Chard Game Processing Board

  • Chard Better Burger Press

Preparation

Step 1

Wash the grinder and parts thoroughly…hopper, grinding plates, cutting blade, auger head, and auger. Dry and put parts listed in the freezer.


Step 2

Grind peppercorns and juniper berries in a coffee mill.


Step 3

On the Game Processing Board, cube the meat and bacon. Transfer to a plastic bowl and place in the freezer. The meat needs to be on the verge of freezing, but not frozen, before grinding.


Step 4

Grind meat and bacon through the coarse plate. Change the plate to the medium plate and grind again.


Step 5

Mix in the ground juniper, peppercorns, and Dash seasoning with the ground meat. Do not overwork the meat.


Step 6

Form meat into ¼ lb loosely packed meat balls.


Step 7

Spray Better Burger Press with olive oil. Place a meat ball in the press and form into patties.


Step 8

Slice the blue cheese and put about 2 tbsp of cheese on the center of a patty. Place another party on top and pinch the edges together to form a ½ lb patty.


Step 9

Place patties in the refrigerator until ready to grill.


Step 10

Over medium heat, melt 1 tbsp butter and add the sliced onion. When starting to brown, add the mushrooms. Sauté until onions are golden brown. Set aside.


Step 11

Stabilize your grill at 500F and for direct cooking.


Step 12

Salt the patties with kosher salt.


Step 13

Cook for 2 minutes directly over the flame. Flip and transfer to the upper grill and cook for 2 minutes. Top with more blue cheese and sauteed onion and mushrooms. Cook to desired doneness.


Step 14

Remove burgers from the grill and rest while you are preparing your buns.


Step 15

Toast buns over the flame. Be careful not to let them burn.


Step 16

Dacus Up your buns with lettuce, tomato, and mayo. ENJOY!


 

Tips:

  • Keep all of your grinding equipment extremely cold.

  • Partially frozen meat will grind better and not "mush" through the grinding plates.
