Fresh Chanterelles sauteed in bacon...what could be better? Silky smooth with a woodsy bacon flavor. These can be eaten as an appetizer, side dish, or used as a topper on hamburgers or chicken. The uses are unlimited.

Ingredients
4 strips bacon
1 tbsp clarified butter
2 cups chanterelles
1 clove garlic, minced
2 tbsp roughly chopped parsley
1 tbsp lemon juice
Kosher salt and freshly ground black pepper, to taste
Preparation
Heat a cast iron skillet over medium heat.
Add bacon and fry until crispy, 10–12 minutes. Transfer bacon to paper towels to drain; set aside.
Add clarified butter to bacon grease.
Increase heat to medium-high and add mushrooms and garlic; cook until golden, 5-7 minutes.
Sprinkle with parsley, lemon juice, salt, and pepper.
Garnish with reserved bacon.
